Ketogenic Dosa Recipe

The Ketogenic diet is a low carb, high-fat diet with moderate protein. This drives the body towards a process where it starts burning fat instead of carbs for energy generation.

A lot of the information about ketogenic diets are geared towards non-vegetarians, making it difficult to know what is appropriate for a vegetarian. 

Here is a low carb and keto optimised recipe for a ketogenic Schezwan dosa;

Number of portions – 4

Keto Dosa Ingredients :
Sunflower Oil – 1 tablespoon
Almonds – 50 gms
Mozzarella Cheese – 50 gms
Coconut Milk – 100 gms
Coriander Leaves – to taste
Turmeric Powder – to taste
Malgapuri powder – to taste
Processed Cheese – 40 gms

Schezwan Sauce and Vegetables Ingredients :
Kashmiri Chilli – 4 gms
Sunflower Oil – 1 tablespoon
Erythritol – to taste
Celery Leaves – to taste
Garlic – 4 gms
Thin Soy Sauce – to taste
Ginger – 4 gms
Ketchup – to taste
White Distilled Vinegar – to taste
Water. – As per chef

Coconut Chutney Ingredients ;
Dry coconut – 12 gms
Garlic – As per chef
Green Chillies – As per chef
Coriander Leaves – As per chef
Cumin Leaves – As per chef

Schezwan Sauce Process ;
Cook the chillies
Add the oil and other ingredients other than vinegar to the processor and grind it
Then cook the mixture on the gas and add the vinegar, soy and ketchup

Coconut Chutney Process ;
Mix all the ingredients together in the processor
Weigh the total chutney and divide it by the number of portions

Keto Dosa Process

Grind the almonds and make almond flour
Grate the mozzarella cheese
Mix the coconut milk, grated cheese and almond flour to make a batter
Add the oil to the pan
Add the batter per qty to the pan
Let it cook, once it turns brown turn it over
Add the schezwan to the pan
Add all the veggies and let them cook
Grate the required amount of cheese in the dosa
